Named after our beautiful Ghost Gum tree, this is the ninth vintage of Ghost Gum White. With the 2018 vintage, the Chardonnay component is undoubtedly the star. With 92% of the blend being Chardonnay, the Semillon makes up just 8%. The idea here is that after 5 or 6 years in bottle, the Chardonnay will become quieter and the wonderful secondary characteristics of Semillon will start to take over. Both varieties were barrel-fermented and aged in 55% new oak - mostly French, with the Semillon being fermented and matured in Eastern European barrels. All the grapes for this wine were grown on the Stony Brook Estate.
Pale gold in colour with glints of vibrant green. The Chardonnay component offers fresh citrus and butterscotch on the nose, while the Semillon gives richness and a suggestion of honeycomb on the palate. The oak is perfectly balanced and complements the fruit and natural structure of the wine. The brightness and oak contact will allow this wine to age and change gracefully for up to 10 years from harvest. A wonderful accompaniment to seafood or creamy pasta dishes.
