The northern slopes of Paarl mountain makes for good Viognier, with its long, warm summers but slight cool breeze in the evenings. The Ridgeback Viognier grows on the East-West facing slopes and the shoots are vertically positioned. The wine was matured in barrel for 9 months and batonaged regularly to develop mouthfeel. Viognier generally has a full, soft mouthfeel with beautiful aromatics. This wine is a great example.
